Eggs contain just about every nutrient we need including vitamins B12 and B2, fat-soluble vitamins D and E, and selenium, calcium, and zinc (1). Eggs are also one of the best dietary sources of choline, a nutrient the body needs to build cell membranes, produce neurotransmitters for brain function, and aid the absorption of fat which is important for those fat-soluble nutrients like vitamins D and E (2).

Festive Red & Green Frittata Recipe:
Ingredients:
6 large eggs (organic pasture-raised)
1 tbsp. butter (grass-fed, organic)
2 cups spinach, chopped
1 pint grape tomatoes, halved
1 red bell pepper, diced
¼ cup green olives, chopped
½ tsp. sea salt
¼ tsp. black pepper
1 tsp. oregano, dried
½ tsp. parsley, dried
¼ cup feta, crumbled
Instructions:
Preheat the oven to 350 degrees F.
In a large bowl, whisk the eggs and seasonings together.
Heat an oven-safe skillet over medium heat, add the butter, and saute the spinach, tomatoes, peppers, and olives for 1-2 minutes.
Pour the eggs over the vegetables, and top with the feta cheese.
Cook over medium heat until the eggs are set around the edges, about 2-3 minutes.
Transfer the frittata to the oven and bake for 10-15 minutes, until the eggs are set in the center.
Remove the frittata from the oven, rest for 5 minutes, then slice and serve.
